Leftover meats

We also enjoy the old "family faves" but have only the 2 of us. I must admit, my husband is better at being creative with leftovers, but here are some ideas we have used:
Roast beef - if it is not already falling apart tender, throw it in the crockpot with a bit of liquid and garlic until it is, then shred. Take shredded beef (or use leftover chicken and shred it) and saute in pan with some garlic and onions, add taco seasonings (cumin, cayenne, etc or a taco seasoning packet) and make into tacos, soft or hard shell with toppings of choice, taco salad, super-duper nacho plate, or whatever else you can think of. We call the shredded beef machaca, which I think means pounded or crushed.
Sometimes we make a roast in the crockpot, shred it and have as "hot beef" sandwiches au jus on rolls, then make machaca the next day.
Chicken - we are not the best with this one, but chicken pot pie is pretty good in oven proof cereal or soup sized bowls, cut out desired amt of crust from purchased one or make a biscuit crust. Chicken, garlic and broccoli make a good pizza topping combo. Chicken stirfry, just do the veggies first, then throw in the cooked chicken at the last minute, just to heat up.
I posted some leftover ham ideas on a different board, I don't remember which but a general search for ham should do the trick.
