ISO: Dandelion Salad

Greetings

I'm seraching for a Summer Dandelion Salad Recipe for my small restaurant. Geographically, I'm located in the foothills of the Ozarks; thus, there are many beautiful indeginous flowers to choose from thanks to our city's wonderful farmers market. Everything from peppery Nestertia to sweet cinnamon basil and Pineapple Sage are at my disposal, so if anyone has a special understanding of some of these flowers and herbs any advice would be greatly appreciated. I'm also taking suggestions on any new and exciting dessert sauces (i.e., tea or coffee based).
