Recipe: Spooky Eyeball Tacos (using meatballs and taco dinner kit)

SPOOKY EYEBALL TACOS

1 pound ground beef
1 package (10 3/4 ounces) Taco Bell Taco Dinner Kit
Shredded lettuce
Chopped tomatoes
Sour Cream

Mix meat and seasoning mix. Shape into 36 (1-inch) balls; place in 13x9-inch baking dish.

Bake at 350 degrees F for 15 to 20 minutes or until cooked through.

TO SERVE:
Fill each of 12 Taco Shells from the dinner kit with 1 meatball, Taco Sauce., lettuce and tomato. Top with 2 additional meatballs that have been dipped in sour cream. Garnish with sliced pitted ripe olives to create "eyes."

MAKE-AHEAD TIP:
The meatballs can be made ahead and frozen in zipper-style plastic freezer bag. To reheat, open bag slightly; microwave on HIGH 2 minutes.

Makes 12 servings.
