ISO: Deep fried corn fritters

Misc.

Hello,

Long ago in Southern California I ate at the Copper Skillet in Riverside County.
They would serve corn fritters instead of bread with their meals. I have been looking for a comparable recipe ever since.

The fritters were golf ball size and shape, donut like in texture and had corn bits in them. They were deep fried and served with honey butter.

Maybe someone has a recipe that come close?

Thank you.Kathie/CA
