Recipe: Deep Fried Corn Fritters

Corn Fritters

For 6-8 servings of Corn Fritters you'll need:

6 ea. ears of corn
1/4 cup all purpose flour
2 TB sugar
1/2 tsp salt
1/8 tsp black pepper
1 ea. beaten egg
2 TB shredded monterey jack cheese
1 tsp cajun spice (if you like it zesty)

Place the corn cobs in a mixture of half
water and half milk and boil until tender,
about 10 minutes.

When you cook it in milk it does two
things to the corn--it makes it more
flavorful and keeps the corn a little
crisper. Remove the corn from liquid
and cool. Cut the corn off the cob.

Mix the dry ingredients; add the egg
and cheese and corn.

Heat the oil in the deep fryer to
350 degrees. Drop spoonfuls of batter
into the oil and cook until golden brown.

Place on paper towel to remove excess
oil and serve.
