ISO: Fresh apricot/blue cheese appetizer

My sister was recently telling me about an appetizer she had had at a cocktail party a few years ago - it was fresh apricots, halved and pitted. Then some type of blue cheese thinned down with something and put into the indentation and topped with a crisp walnut piece.

Would anyone know what this might be or what you might thin out the blue cheese with?

I have 7 lovely apricots and have to go to a "cosmos" party tomorrow afternoon where we all bring something for the table.

Thanks in advance if anyone can help me out.
