CINNAMON-ORANGE CRANBERRY SAUCE
1 (12 ounce) package fresh or frozen cranberries
1 cup water
1 cup sugar
Finely shredded zest of 1/2 orange
1 cinnamon stick
1/4 cup orange juice
Place cranberries in large bowl. Pick over and discard any shriveled or discolored berries.
In large saucepan over medium heat, combine water and sugar; bring to a boil. Stir in cranberries, zest and cinnamon. Boil slowly, 8 to 10 minutes, until berries burst, stirring constantly. Stir in orange juice.
Place sauce in bowl and refrigerate until thoroughly chilled before serving.
Makes about 2 1/2 cups
