ISO: Fresh Mozzarella

I made fresh mozzarella for the first time using ready made curd. We put some of the curd into a pan that had boiling water, formed the balls, wrapped it in saran wrap, then dropped the balls into ice water. my question is the mozzarella, while tasting very good, was dry. What else can i do to make a wetter cheese.
