ISO: frozen corn on the cob
Misc.Hi: Our neighbors gave us a bushel of sweet corn last night. I put it on our back porch - covered, but not AC. I was interested in the recipie for just putting ears in a freezer bag. I have too much to blanch, as this is my only day off until the weekend. I remember my mother blanching and then freezing. What about the enzymes that blanching kills in order to have a "fresh ear of corn" taste. We would usually bring out the frozen, blanched ears for Christmas dinner and they were great - not wonderful, but great. Any advice you can offer would be appreciated. Thanks so much!
