ISO: Fuji Apple Salad (like Panera Bread)

I am looking for a clone recipe for the Seasonal Fuji Apple Salad from Panera Bread. It contained dried Fuji Apples & a crumbled cheese. The dressing contained cider. This was my favorite and it was only on their menu for a short time.
