ISO: Gingerbread boys

Hi!! Happy Holidays!! Does anyone have a recipe for gingerbread boys so the dough works up nice? I always have so much trouble with it...or is that just part of the fun???? I never get many cookies made from the dough...even if I double it...it's so hard to work with...maybe there is a trick to it...I ALWAYS have more dough on my hands than on the cookie sheet.....Thanks for any ideas....
