Recipe: Lemon-Strawberry Waffles
Breakfast and BrunchLEMON-STRAWBERRY WAFFLES
"No one will guess the secret ingredient in your waffles, it's lemon yogurt! For variety, try another flavor of yogurt or use a different berry on top."
3 cups strawberries
1/2 cup margarine or butter, at room temperature
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 cups nonfat or lowfat lemon yogurt
2 eggs
Turn on waffle iron, following manufacturer's instructions.
Use utility knife to cut tops off strawberries on cutting board. Cut berries into thin slices and place in serving bowl; set aside.
Place frying pan on burner, add margarine, and melt slowly over low heat. Turn off burner.
Place flour, baking powder, baking soda, and salt in large bowl and mix with whisk until well blended; set aside.
Place yogurt and eggs in medium-size bowl and mix with whisk until blended; add to flour mixture and mix with whisk until well blended. Add melted margarine to batter and mix with whisk until well blended.
Use utility spoon to place about 3/4 cup batter on center of waffle iron; close iron and cook for about 5 minutes, until steaming stops. Carefully open iron and use fork to remove waffle to serving plate. Repeat until all batter is used. Turn off waffle iron.
Makes 12 waffles
