ISO: Green Food Recipes

HELP!!!! Am attending special church function for St. Patricks Day. Minister has come up with idea that all food brought for the pot luck dinner should be the color green. Want something out of the ordinary to take, figure there will be alot of green macaroni and cheese and noodle stuff. Would appreciate any ideas other than salads, pistacho cakes and lime jello! Thank You all for any wonderful suggestions I know your gonna come up with.
