Recipe: Date Bran Muffins (using whole bran and honey) (1970's)

Breads - Muffins, Quick Breads
DATE BRAN MUFFINS

1/4 cup soft shortening or butter
1/4 cup honey
1 egg
3/4 cup milk
1 cup whole bran
1 cup pitted dates, snipped
1 cup sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt

Heat oven to 400 degrees (hot). Grease 12 (2 1/2 inch size) muffin pan cups.

Cream together shortening and honey. Add egg, beat well. Stir in milk, bran and dates.

Sift together dry ingredients. Add to date mixture. Stir just to moisten ingredients. Batter will look lumpy. Fill prepared muffin pan cups 2/3 full.

Bake for 20 to 25 minutes or until done.

Makes 12 muffins
