Recipe(tried): Asparagus Green Pea Casserole/Spinach Artichoke Casserole

Hi Pajalind, Here are 2 good casserole dishes that always disappear at church functions when I take. ASPARAGUS GREEN PEA CASSEROLE: 1 - #2 can green peas, drained, 1- #2 can asparagus, drained, grated cheddar cheese, 1/2 can water chestnuts drained or slivered almonds, 1 can cream of mushroom soup, garlic and salt to taste, cracker crumbs, Mix together grated cheese, cracker crumbs and butter (melted) and layer in bottom of casserole dish. Layer peas and nuts and sprinkle with garlic powder and salt. Add layer of asparagus and more grated cheese. Cover with mushroom soup which you could color green. Top with cracker crumbs and dot with butter. Bake for 30 min. at 350. SPINACH ARTICHOKE CASSEROLE: 1 - can artichokes,(drained) 1 can sliced water chestnuts,(drained) 1 - 8 oz, pkg. cream cheese,(softened) 1 - pkg. chopped spinach (thawed and drained,) 1 stick butter. Melt butter and beat in softened cream cheese until creamy. (Add green food coloring here). Spray casserole dish with cooking spray. Place spinach in bottom of dish. Arrange artichokes on top (I usually quarter them). Next, layer water chestnuts on top. (You can add a layer of sliced mushrooms next, if desired). Top all this with the cream cheese mixture. Bake at 350 for 20 min. {This is naturally a very pretty bright green color and is so good even children like spinach} I would double for a church gathering. Very Rich! Hope this helps.
