ISO: Green Sauce served on Chili Rellenos
Misc.I am trying to duplicate a recipe for a green sauce served on chili rellenos at my local Mexican restaurant. We are lucky here in the Central Valley -- we have some of the very best Mexican restaurants around. The chef there (who refuses to divulge anything) makes the most wonderful green sauce. It is not made from tomatillos. It is smooth, like a puree, only slightly "hot" and very tasty. One of the waitresses once told me that it had green bell peppers in it. I have tried to duplicate it, to no avail. I sauteed green peppers, I roasted and skinned them, I added Anaheim chilis, chicken broth, all manner of things. Anyway, I was just wondering if anyone has any thoughts or secret recipes!
