Recipe: Quaker's Best Oatmeal Pie

QUAKER'S BEST OATMEAL PIE

3 eggs
3/4 cup firmly packed brown sugar
1/2 cup sugar
3/4 cup 2% low-fat milk
1 teaspoon vanilla
1 1/4 cups Quaker Oats (Quick or Old fashioned, uncooked)
3/4 cup raisins or other dried fruit such as cherries, cranberrries or chopped apricots
3/4 cup chopped nuts (optional)
1/2 cup flaked or shredded coconut
One prepared 9-inch single pie crust

Heat oven to 375 degree F.

Beat eggs and sugars until well blended. Add milk and vanilla; mix well. Stir in oats, raisins, nuts and coconut; mix well. Pour filling into prepared pie shell.

Bake 35 to 40 minutes or until center of pie is set. Cool completely on wire rack.

Serve with ice cream or whipped cream. Store, covered, in refrigerator.
