ISO: How to Corn Beef - questions

How to corn beef. I have just printed off you recipe on 'how to corn beef'. The ingedients mention kosher salt - is this something specific or can I use rock salt. Also - what are pickling spices. I live in the Middle East so not all ingredients are available. My Indian friend brought me back some Salt Pieter (?) to use. I was told to soak my piece of beef in juice of 6 lemons, 2 tablesp rock salt, 1 teasp of salt pieter, for about 2 days then cook as usual. The result is not a good one. The meat is tender but tastes strongly of lemons - yuk! I would like to take the recipe that you posted on this website but would like some clarification of Kosher Salt and Pickling Spices before I proceed. Really missing my corned beef which only comes in a can here! Thanks!
