ISO: How to figure main course for a tailgate wedding reception for approx. 100

Misc.
For my wedding reception, I am having a "tailgate" party with hot dog cart. The vendor will also be providing hamburgers, sausage, chicken patties, and pulled pork. Guests may be around 100. Guests will be permitted to have what they want. How do we estimate what to have on hand, as all guests won't have 1 of everything. I don't want excessive waste. There will be many side dishes.
