ISO: Joey Tomato's Ginger Beef

I'm searching for a recipe for ginger beef like they make at Joey Tomato's. It isn't like the standard chinese ginger beef - it's darker and usually a little more tender than the typical stuff you order from the Chinese food place at the end of the block.

My wife is crazy about this stuff and I'd like to make it for her at home if I could...
