ISO: Mexican Hats

As a kid, my mom and I used to make Mexican Hats. I cannot remember exactly how to make them. I do remember it was bologna and mashed potatoes. My brother and I were reminiscing about those days, and would like to make them again. If anyone remembers how to make them, please help me out!
