ORIENTAL PORK LOIN ROAST
1 (3 to 4 pound) pork loin roast
oriental marinade
1/4 cup soy sauce
2 tablespoons red wine vinegar
2 tablespoons vegetable oil
2 tablespoons honey
2 cloves garlic, minced
1 teaspoon grated fresh ginger (or 1/4 teaspoon ground ginger)
1/4 teaspoon dry mustard
2 tablespoons chopped yellow onion
Place pork tenderloin in a shallow glass dish.
In a small bowl stir together all ingredients for marinade. Pour marinade over pork. Cover and marinate 12 hours or overnight in the refrigerator, turning several times.
WHEN READY TO COOK:
Remove from refrigerator 30 minutes prior to grilling.
Prepare grill.
Remove pork from marinade; set aside. Pour marinade in a saucepan and boil for 5 minutes.
Grill pork, turning several times and basting with reserved marinade, until tender or a meat thermometer registers 160-170 degrees F, about 1 hour.
Let stand 10 minutes before carving, then slice across the grain and arrange on a warmed platter. Serve immediately.
