ISO: Michael Jordans Mac & Cheese

I just got back from Chicago and we ate at Michael Jordans restaraunt. The Mac & Cheese there is so good. I wondered if anyone knows what kind of cheese is in it or how to make it. It wasnt in copycat so I'm hoping somebody has an idea. thanks deb
