ISO: Mike's Ribs

Mike's in Springfield, Virginia has the BEST RIBS! They are so tender they just fall off the bone. I don't think they are a chain, so I probably can't find their recipe, but thought someone might know: How do you cook them so much to get them that tender that they fall off the bone, but they aren't all dried up?
