ISO: Need Make-ahead main dish for buffet

On Christmas eve, I am serving a buffet dinner for 9 or 10. I am having scallops and shrimp au gratin, white rice, garlic green beans, mixed green salad and crusty bread. BUT, one of the guests does not eat seafood, so I need a meat main course. I would like to serve it on rice, as well. And I would like to be able to make it ahead and just heat it up at dinner time. I was thinking of pork medallions in some kind of sauce-like peppercorn or maybe something like a beef stroganoff. Note this guy is a picky eater--so no fruit with the meat. Any ideas out there?
