ISO: Picky eaters....My husband, not my kid

I have spent hours scouring the internet for recipes my picky husband would eat. I'm tired of the same old thing week after week. Not even recipes other picky husbands like will satisfy my picky eater. He doesn't want anything to do with seafood (unless it's fried catfish), vegetables that aren't covered in processed cheese, anything too spicy, tomatoes that aren't a pureed sauce from a jar, mushrooms and olives are a big no-no, and I can't find new ways to liven up that chicken, pork chops, and beef. I'm Italian-American and even I am tired of pasta! Please, Please help!
