Recipe: Ginger Soy Dressing or Marinade (using orange juice, no oil)

GINGER SOY DRESSING
"This tangy dressing may also be used for a marinade for shrimp, fish, chicken, or grilled tofu."

1/4 cup Japanese wine vinegar
1/4 teaspoon Thai roasted chile garlic paste (available in specialty markets)
2 teaspoons garlic, finely minced (1 to 2 cloves)
1 tablespoon thinly sliced scallions
2 teaspoons finely minced fresh ginger
1 cup unsweetened orange juice
1/4 cup light soy sauce
1 teaspoon sugar

Blend all ingredients with a wire whisk and allow to chill thoroughly.

Makes 1 1/2 cups
Serving size: 1 tablespoon
