ISO: Quebec Indian Cornbread (using maple syrup and butter)
Misc.Years ago my mother made Quebec Indian Cornbread. I only had one hand written copy of the recipe. After three moves I can't find it. It was made with Maple syrup and melted butter in the ingredients. Most recipes I have found for cornbread use sugar and oil. The ones I have made since have very wet batter and don't rise very high. I remember we kids would burn our fingers trying to get it out of the pan, directly out of the oven, it was sooo good!! I would appreciate anyone sending me a really good recipe.
