ISO: Question New to Canning

My mother canned food for years at home by placing jars into a skillet with water about 1 inch up the side, placed the food in, then cleaned the top and placed the lid on with the ring. Instead of leaving them in the skillet she would remove them and flip them over on the cabinet. I never remeber having problems with this method but I was wondering about the canning of salsa and such stuff. If I do can salsa can I do it this way instead of puting the whole jar underwater and if not where can I find that type of cooking product. Thanks for any help.
