Recipe: Potatoes and Onions Baked in Broth

POTATOES AND ONIONS BAKED IN BROTH

6 medium potatoes, peeled and cut into 1/2-inch thick slices
2 cups chopped onions
1 (10.5 oz) can chicken broth
1 tsp. oil
Salt and pepper to taste

Preheat oven to 325 degrees F.

In a 1 1/2 quart souffle dish, place all the ingredients and stir them around so that they are nicely mixed.

Seal top with foil and place in a 325 degree F oven. Bake for about 1 hour 30 minutes or until potatoes are tender. Liquid should almost be absorbed, but use the little that remains for gravy.
