ISO: S & S Cafeteria's Chopped Sirloin and Gravy

I am looking for the recipe from S&s Cafeteria's chopped sirloin. Also for the gravy or beef broth that they scoop over it. They eat it just like its a regular steak, not as a burger or meat loaf. I am crazy about this dish and pray someone can help me figure out the secret recipe. thanks
