Recipe(tried): Crispy Calamari

Hi Betsy - I had dried them off very well. I like Chef Al's recommendation to use half flour and half fine cornmeal. Last night I did the flour, and added in the seasonings, and also some unflavored Panko crumbs, then shook off the excess.

But the coarse Panko wouldn't stick to it, it was left in the sieve! But just using the dry flour instead of the batter worked so well - it ended up being nice and crispy and lots of flavor because I really poured in the Old Bay!

Ed loved it and so did I - next time, I'm going to try it with the cornmeal idea. Thanks for your help.
