ISO: Seeking authentic Detroit Coney sauce recipe

Misc.
I, a native Detroiter stranded in NYC, am looking for the "top secret" recipe for Coney Island hot dogs, such as served in the Lafayette and American Coney Islands. Also, there is a company called National Chili, that makes a mix that they ship to many Detroit area Coney Islands. Another company is Koegel Meats, which lists the ingredients of their mix as: "Beef Hearts, Beef Suet, Water, Wheat Flour, Cracker Meal, Textured Vegetable Protein, Spices, Salt, Paprika, Sugar, Maltodextrin, Onion Powder, Garlic Powder, Spice Extractives." Also, it is more "saucy" then the recipes I have seen on this site and elsewhere on the Net -- more the consistency of spaghetti sauce with meat, except, as can be seen, there in no tomato sauce, tomato paste, ketchup, etc. I can use ground beef and do without the maltodextrin, textured vegetable protein and "spice extractives." Mainly, I need to know the proporportion of the other ingredients and the all -important exact composition of the ingredient listed simply as "spices," which I assume is a combination of several spices. Thanks!
