ISO: Spaghetti Sauce - how to prevent watering off when adding to pasta

I love to make spaghetti sauce, it is one of my favorite meals. I have a question though..... often when I make my sauce, after it is done and I put it over the pasta, the sauce separates and I get a watery liquid in the bottom of the pasta dish.

What causes this and how can I stop it from separating?
