ISO: water bath for apple butter

Misc.
I made apple butter in my crock pot yesterday and did not do a water bath. I got on here this morning and am aware that I probably should have done that. I just inverted the jars while they were still hot. Can I go back and do a water bath now that the apple butter has cooled, or is it too late?
