ISO: Ways to doctor up instant potatoes,

Does anyone have any good ideas on "doctoring" up the flavor of instant mashed potatoes? Sometimes they are just so much easier than peeling!!! I'd like to fool my family into thinking they are the real thing!! Thank you soooo much for your time.
