ISO: White Eggplant

We are growing white eggplants in our garden, which surprised us, as we thought they were the normal eggplants. Can you tell me something about them. Are they edible and how do we kmow when to harvest them? Any help would be appreciated. We have never seen white ones before
in the market. Thanks for your help in advance.
