ISO: Why does my potato salad turn soupy after a couple of hours?

Why does my potato salad turn soupy? It always looks good (and taste good) for the first few hours...but if I don't serve it right away, it turns soupy. I always have a request to make this for get togethers, but to make it a day ahead is imposible. Here is a list of ingredients...I don't measure anything I just go by taste.

Red potatoes
celery
radishes
cuccumber
green onion
green pepper
salt
pepper
salad dressing
mustard
viniger
sugar

Any help I can get would be greatly appreciated...as I have to make it for the 4th weekend.
