Hi Kathy :-) I'm pretty sure that the culprit in your recipe is the cucumbers. They have a very high water content. If you notice in recipes such as Greek Tzatziki, and Indian Raita, the cucumbers are grated but then you squeeze as much water as you can out of them so that they don't dilute the particular dish. So, I guess if you want to rid your potato salad of it's watery consistency you will either need to omit the cucumbers or grate them, and squeeze them in you hands, a paper towel, or a clean tea towel to get rid of the excess water, just as you squeeze spinach (another vegetable with a high water content) in many recipes. Another idea, which I have not tried is to salt the sliced cucumbers (much like you salt and drain eggplant) and let them sit in a colander for, maybe 30 minutes, then blot them well with or between paper towels. The salt should draw out much of the moisture. Since I have not tried this, I don't know whether or not it would make your potato salad too salty. You could rinse them under cold water, then blot them dry, but I worry that that would just be puting moisture back into them and the salad. I hope that this helps. Maybe others will have other ideas as to the reason your salad is too watery but meanwhile, I really think that cucumbers are the culprit.
