Hi Gina - Your mom's recipe for the Cuban pork chops really sounds wonderful - I've been busily printing off lots of your recipes, especially some of the chicken ones - my sister-in-law is coming to visit for two weeks, and she's blind - she still lives alone in her house, but doesn't cook very extensive dishes since she can't read the recipes - but does she love to EAT. I'm collecting recipes that sound good and fairly quick, since I have to do them after getting home from work after 5pm.

This recipe sounds great - you mentioned marinating 2-3 hours - if I were to do the marinating in the morning before leaving for work, would all day marinating be a problem?

Also, I'd love some suggestions for entertaining someone who's blind - she has alot of the talking books, but other than that, what can one do - sightseeing in FL of course is senseless, or movies, etc - I'm in a bit of a quandry as to how to fill two long weeks!

Thanks again for all the wonderful recipes - Cool today isn't it!!! Even in Ft. Myers - and aren't the new strawberries heavenly!

I've picked most of my oranges left on my little tree, and will be squeezing fresh juice for her!
