Thank you again, Gladys! Please know that this isn't a recipe I made up, but one I found somewhere (I wish I remembered so I could give them credit!). I'm pretty good and finding delicious recipes -- I'll admit to that, though!

As to the Pico de Gallo, I'm afraid I don't follow a recipe and just throw together chopped tomatoes, onion, hot pepper, cilantro (sometimes Italian parsley, too), S&P and lots of lime juice (sometimes red wine vinegar if I don't have lime, but I prefer lime).

Perhaps you would post your favorite Pico de Gallo recipe so that other readers who might want exact proportions will have a good recipe?

I'd love to hear how you like the queso fundido after you try it. I'll bet you can get some excellent chorizo there in PR!!!
