Hi Pearl, I ended up doing my peppers on Sunday, I had to that day because we had picked them because of a frost threat, (didn't get frost after all). Anyhow I just ended up winging it and used my pickle solution, roasted the peppers, peeled them, packed them in jars and poured it over, but didn't do boiling water packing. All the jars are sealed anyhow. I just finished reading those recipes in Section 2 and thank goodness it was pretty close to what I did!! I wonder why it is so hard to find a recipe for this. So thanks alot for putting me on to those!! Hope yours turn out! Jan
