I've found that the canned chicken (looks like a can of tuna) is so versatile. Put some (in it's juices) with a little water, some taco seasoning, salsa and cheese slices, simmer until thickened, spread on a large tortilla (leave 1/2 inch or so around the edges) microwave for 30 seconds and you've got yummy quesadillas. Or omit the cheese and use for chicken tacos.
Also, I use the chicken with ragu alfredo sauce and fettucine noodles that cook up in 10 minutes or less. Throw in some english peas and serve with garlic bread.
Or serve it over rice with teriyaki sauce or hot sauce or whatever sauce you like. Makes it easy to do chicken helper because you don't have to cook the chicken.
Boil some chicken broth, add a can of chicken noodle soup for extra flavor, a can of chicken,boil for 30 min, and add canned bisquits (in thirds or quartered), boil until bisquits are cooked through. Easy chicken and dumplings and very filling!
My kids are super active and one night a week I have to make something quick for them. I keep about 10 cans of the chicken on hand.
Casseroles are great, too. If you can throw one together the night before, or on the weekend and freeze, like suggested by some other ladies, that works great. Also, look on the cooking for 1 or 2 board.
With leftovers, throw them in the crockpot and make a hearty soup with it. I made some using leftover hamburger helper.
