About question # 1: I am not sure at all that two packages of liquid pectin are equivalent to one dry package.

Question # 2: By all means I am sure you can substitute honey for sugar in some cases. I prefer honey in most cases for making my sweets and desserts because I am a controlled diabetic.

Question # 3: I cannot answer the exact equivalent for the substitution. Usually, when I use honey, I substitute 1 tb of honey for 1 tb of sugar ( the results are less sweet). But in this case you are referring to 6 cups of sugar, therefore I am not at all sure that this substitution in this particular case will work.

I hope some of the expert ladies in this Board might be so kind as to provide an answer about your question.
