Amuse bouche or amuses geules are little "mouth pleasers" served before the main meal in fancy restaurants. They are what we also used to call canapes before they got all high and mighty. They are little mouthfuls of various types normally served with a cocktail before dinner. To find suitable recipes look in French books for canapes or Spanish ones for Tapas. They could be simple or complex - I like smoked salmon (lox) wrapped around a cream cheese and chive mixture, or leek in a raspbery vinegar served in little pastry cases (Leslie Land's recipe), or even caramelized finely chopped onion mixed with diced mango served on small pieces of toast.
