OLD BAY LASAGNA SWIRLS WITH CRAB SAUCE
FOR THE LASAGNA SWIRLS:
6 lasagna noodles, cooked
1 1/2 quarts favorite spaghetti sauce, divided use
1 cup ricotta cheese
2 cups shredded mozzarella cheese
1/3 cup grated parmesan cheese
FOR THE CRAB SAUCE:
2 tbsp. butter
1 cup lump crab meat
1/2 pound small or medium shrimp, peeled and deveined
2 scallions, including tops, chopped
1/2 cup chopped green pepper
1/2 cup sliced water chestnuts
1/2 cup sliced mushrooms
1 tsp. Old Bay seasoning
2 tsp. Worcestershire sauce
2 tbsp. white wine (or water)
Preheat oven to 350 degrees F.
TO PREPARE THE LASAGNA SWIRLS:
Place lasagna noodles onto wax paper sheets. Spoon just enough spaghetti sauce on top to cover. Top each with cheeses and roll up into a jelly roll. Split in 1/2 lengthwise and lay each lasagna swirl, rippled side up, into a 9 x 13 baking pan.
TO PREPARE THE CRAB SAUCE:
In a large non stick frying pan, melt butter over medium heat. Saute crab meat and shrimp until lightly browned, about 2 minutes.
Stir in scallions and green peppers and saute 1 minute.
Add water chestnuts, mushrooms, Old Bay seasoning, Worcestershire sauce, wine, and remainder of spaghetti sauce. Cook at medium heat until warm. Pour crab sauce around the lasagna swirls.
Bake at 350 degrees F for 30-40 minutes.
