Another dust catcher

I have a Simac pasta machine that I bought 12 years ago after taking an Italian cooking class and thought I could not live w/o it. I used it a few times and found that making pasta is like making bread--you have to get your hands in it and feel it. (I don't use my bread machine any more either). I have a hand crank pasta machine that I use when I make fresh pasta and it is so quick and easy. There are so many variables to consider when making fresh pasta--the flour varies from batch to batch, humidity is a consideration, ingredients affect the amount of flour to be added. The way the dough feels will dictate what you need toadd tothe dough. You have less control when you usethe machine. I am sorry to be so negative, but I am finding that the more I cook, the fewer specialty appliances I use.
