Barb/mn, re: Freezing quiche

It's been so long since I made my zucchini quiche, but from what I recall it
was fine to freeze it. I always like to parcook food before freezing,
especially stuff containing eggs etc. I never use a microwave with pastry
goods, but if they are crustless it should be OK for defrosting.
In case the top of the quiche gets too brown before the core has cooked
through, I would cover it with foil and then remove it for the last 10 mins. or
so. As you say, I would add the breadcrumbs later so they don't get too brown.
I have some recipes that call for grated cheese to be sprinkled on top, and for
those I only add it at the end so it doesn't turn brown and chewy but just
melts.
