Recipe: Estonian Crumb Cake Pulukook

ESTONIAN CRUMB CAKE
You're thinking of a dessert called purukook. There's an excellent recipe and lots of information here: Nami-Nami

Below are some translated recipes, two with jam and one with a popular version that uses apples and farmer's cheese.

PURUKOOK

200 g soft margarine
2 dl sugar
1 egg
8 dl wheat flour
Skipped:
5 dl agreeable jam

Beat the margarine with sugar. Continue mixing with eggs and flour until you get a homogeneous mixture is slightly grainy, like small peas. Pour 2/3 of the crumb mixture on a baking pan lined with 25x35cm baking mold. Pour the jam. Bake in 200-degree oven for about 3o minutes, then sprinkle with remaining crumb mixture and bake for another 10 minutes.

CRUMB CAKE

400 g of wheat flour
100 g of sugar
pinch of salt
200 g butter

Mix the flour in a large bowl of sugar and a little salt in the center.
Or chop into cubes, mix with flour mix.

PURUKOOK

Dough:
6 dl wheat flour
2 dl sugar
1/2 teaspoon baking powder
200 gr butter or margarine
Filling:
4 apples
400-500 grams of curd (substitute american cream cheese)
200 gr sour cream
1 dl sugar
1 lemon zest and juice,
4 eggs

Preheat oven to 200 C. Chop into small cubes, or is at room temperature, flour, sugar and baking powder purutaoliseks homogenous mass. The best is to do it with your hands.
