I love to make breakfast Strata's. It is like a casserole you make up the night before then bake in the morning.I can give you the recipes if you are interested.
Also, sausage pinwheels are a hit with the kids. I make homemade cinnamon rolls and have fresh fruit and fresh orange juice. Sliced ham and biscuits would go great with the grits.
